27. july: appetizers on the fly


The other night I had made a nice, light dinner for S. and I...and he was on his way home from what he described as "a horrifically busy and headachey day". I had only worked a half-day (as I always do on Wednesdays), so I did have the opportunity to relax after work and indulge in my culinary past-time. I made a salad -- very similar to the grilled potato salad he had made and I posted about in the recent IMBB?, but with grilled chicken added to it and more of a dijon mustard and sour cream-based dressing. Nice, light and just a little bit tangy for a warm summer's eve dinner.

As I was saying though, I had made dinner. He was expected home about forty minutes after I had put the salad together and left it in the fridge to allow all of the flavours to "meld". What to do with my spare forty minutes? Well, I could have taken the easy route and sat down on the couch...or done my nails...or read. But I know just how much S. likes to sit and relax for a bit when he gets home, and what better way to do that than with a nice cold drink and some light appetizers? Since dinner WAS really just a salad, I figured some amouse-bouches wouldn't kill our appetites.

We hadn't gone shopping in a while and I was heading to Ottawa for the weekend, so there were sparse foodstuffs available. The salad was literally a mish-mash of what was available and a few things I wanted to use up before they went bad. How does one throw together quaint little hors d'oeuvres from a potato, some feta cheese, a lemon and some pecorino-romano cheese? Well, many may turn tail and run with only these ingredients to hand, but I staid my course. And, came up with yet another original Domestic Goddess recipe to share. I'm pretty proud of myself -- even S. said that these wee Potato Chip Bites could be served at any cocktail party...heh...pat on the back for Jennifer.
