12.november: SHF #2: comfort me with apples...


It's time to bake again! Yes, you guessed, it: the second official edition of Sugar High Fridays has officially arrived. And although I had a few offers of hosting the event in future months no one was able to host it this time around...so I am hosting it myself, once more. A few weeks ago the theme was announced, and I asked you all to bake a dessert with some of the most delicious of autumnal delicacies.

When it starts to get cool out and the sweaters are pulled from the closet shelves and forced into service my mind turns to fall fruit desserts. Apples are the fall fruit that I ponder on the most I think...probably because they are so abundant, so delicious, and so utterly versatile. There are mountains of them at every grocery store and market; pyramids of red, yellow and green and a few with all three colours mixed together...beckoning me to take their shiny orbs home and make them into something delicious.

The house was filled with the sweet, comforting smell of apples baking yesterday with this dessert in the oven for over an hour. I also made a chicken breast stuffed with apple and pomegranate for dinner and turned the day into a total apple theme for S. and I. But the smells were wonderful -- I know that they sell this particular scent, bottled at the drug store. The scent of apples and cinnamon, baking. Why would anyone purchase a bottle of this smell to spray in their home when all they have to do is bake something like this? Or a pie? Or applesauce...? Oh well...I guess not everyone has the time or the inclination to bake in order to make their house smell yummy.

This recipe was really quite easy -- it just had to be assembled, which took all of five minutes and then popped into the oven and baked for just over an hour, basting it with the pan juices all the while. And these Baked Apples were absolutely scrumptious, served with vanilla ice cream and the toffee-coffee flavoured sauce.
