Changes, hints and thoughts for the future:

- a toast to summer: home made, home grilled hamburgers and home made onion rings made from vidalia onions. How much better can it get?

- S. thought that the vidalia onion made the rings just a bit too sweet --without the "bite" of regular onions...

 

Burgers and Onion Rings (not really a recipe)

Ingredients:
ground beef (lean) (or turkey, or chicken, or veal)
onion
1 egg
bread crumbs
parmesan cheese, grated
bacon, cooked (or beef bacon)
2 really delicious dinner rolls, or kaisers, or cheese buns
all the lucious condiments for hamburgers you want
an onion, sliced into rings
1 1/2 cups flour
3 tablespoons cornmeal
3 tablespoons any mixed spices
2 teaspoons salt
1 1/2 cups milk
1 egg
1/2 cup water
oil, for deep frying

Instructions:

1. Mix together first six ingredients in bowl with hands and shape into patties. Refrigerate for an hour or overnight.
2. In bowl, combine flour, cornmeal, spices, salt, milk, egg and water. Dredge onion slices in flour mixture, pressing to coat. Transfer to heated oil (in wok or deep frying pan or deep fryer). Cook until desired darkness (taste when cooled, of course!).
3. Transfer cooked onion rings to try with paper towel to drain and then to tray without towelling to oven to keep warm.
4. Meanwhile, on heated barbeque, cook burgers and warm buns or rolls.
5. Pile condiments and toppings on burgers. Pile a mountain of onion rings on plate. Eat. Drink beer. Toast to the coming summer.
