goat cheese and cranberry tartlets with caramelized onions

ingredients:

1 full sheet puff pastry, 1/8 inch thick
cranberry black pepper chutney
tabasco
chipotle grapeseed oil (or any spicy or flavoured olive oil)
balsamic reduction (recipe follows)
1 cup goat cheese
3 tablespoon extra virgin olive oil

Caramelized Onions
2 tablespoon vegetable oil
3 medium onion, fine julienne

Balsamic Reduction
1 1/2 cups balsamic vinegar

directions:
1. Preheat oven to 400 F. Roll out the puff pastry on a floured surface to 1/8 inch thickness. With a cookie cutter or a knife cut four circles, 3 inches in diameter. Place on a parchment lined baking sheet & return to freezer for 20 minutes.

2. Bake in oven for 10 – 15 minutes rotating pan to ensure even cooking. When golden brown and puffed up, remove from oven & allow to cool. When cooled, break each pastry apart into three sections (top to bottom). Set aside until ready to use.

Goat Cheese Mixture
1. In a kitchen aid with a whisk attachment, whisk goat cheese with olive oil. Season with salt and pepper. Refrigerate until ready to use.

Caramelized Onions
1. In a large pot over medium heat, add oil. When hot, add onions and allow to sweat. When onions are transparent increase heat to medium high & stir with a wooden spoon until onions are caramelized (scraping bottom of the pot to prevent burning). When onions are a dark brown, season with salt and freshly ground pepper. Refrigerate until ready to use.

Balsamic Reduction
1. In a small pot over medium heat, reduce vinegar to 1⁄2 cup. Stir occasionally to ensure vinegar does not burn on the bottom. Remove from heat & allow to cool. Place in an airtight container & refrigerate until needed.

To Assemble
1. Place one of the bottom pieces of pastry on a cookie sheet and spread with caramelized onions. Dot with goat cheese. Place cranberry chutney on top of goat cheese to cover entire surface and put a dash of tabasco on the chutney. Repeat with second layer and top with last pastry piece. Repeat with other pastries. Heat in oven for 4 – 5 minutes.
2. Place one pastry on each plate. Drizzle with chipotle grapeseed oil and balsamic reduction.

notes:

· this recipe was great for a dinner party because everything could be made a day in advance and set aside until just prior to serving - and it takes only minutes to assemble at that point

· the layers of flavours are what makes this dish so fantastic - the caramelized onions are smoky and rich, the chutney is sweet and savory, with the tabasco it is slightly spicy and the goat cheese rounds the whole thing out with it's dense flavouring...YUM!
