2005-07-15: oh honey, you shouldn't have...

Honey is unfortunately an ingredient that is rather under-used in my household. I’m not sure why, because I happen to love it. Honey on toast, honey on chicken, honey in beer…it’s all good. And I know I can substitute honey into just about any recipe that has sugar in it, but for some reason I very rarely do this. In the heat of the moment, with the oven warming up for a cake or cookies it just never occurs to me to use honey as a sweetener. Maybe this Sugar High Friday, “Oh Honey You Shouldn’t Have” will change that – and me - for the better.

One place where I do regularly use honey is on toast. Honey with peanut butter, honey with jam, honey with butter…and the piece de résistance, creamed honey holding it’s own on a piece of toasted multi-grain bread - the list is endless! For some reason in the heat of the moment with the bread in the toaster I DO happen to remember the various jars, bottles and containers of honey perched in my cupboard.

Creamed honey and peanut butter sandwiches were an absolute favourite of mine growing up – which might explain my present avid sweet tooth to some degree. I have always loved a piece of bread with honey and peanut butter as a substitute for a heavy dessert. There’s also more dessert-like dishes such as pound-cake with honey drizzled strawberries and honey-infused hot chocolate for a nice change from the regular flavours of chocolate, chocolate, and more chocolate.

For this month’s Sugar High I dug deep into my memories of honey – and pulled out my all-time favourite as mentioned: PB & Honey sandwiches. But I put a bit of a twist on this idea and made peanut buttter and honey cookies as well as a batch of home made honey ice cream, and put them both together to create this gorgeously drippy mid-summer treat: Bee-Nut Butter Ice Cream Sandwiches. Oh…so…good…
