empire cookies

ingredients:

1 cup butter, at room temperature
2/3 cup granulated sugar
2 large eggs
4 cups all-purpose flour
2 teaspoons cream of tartar
2 teaspoons baking powser
raspberry jam

white satin frosting:
1 1/2 cups confectioners/icing sugar
1 1/2 teaspoons vegetable oil
3 tablespoons warm water
pinch/shake salt
1/4 teaspoon almond extract

instructions:

1. Preheat oven to 350 F and grease baking sheet(s).

2. Cream butter, sugar and eggs. Add remaining ingredients and stir until combined to cookie dough consistency. Refrigerate for 1 hour.

3. Roll out to 1/8" thick an cut with a 2" fluted cutter. Bake on greased sheets approximately 1/2" apart for 10 minutes. Cool completely.

4. Pair together when cooled with raspberry jam in middle and sparingly cover tops with white satin frosting. Before icing hardens, decorate tops with pieces of maraschino cherries, candied violets or royal icing flowers.

Makes about 24 double layer cookies


Changes, hints, tips and thoughts for this recipe:

I found the dough a little dry when I went to roll it out; I just added some water to it and rolled it slowly and carefully...some crumbles but not bad.

I do miss the candied cherry pieces on these...didn't have any so I just used what I know best -- minature pansies and a few roses. Very pretty!
